Fried Pepper Open-faced Sandwich
1 loaf fresh bread (Ciabatta is a great choice)
15 Hungarian Wax Peppers
3 Cloves garlic, chopped
12 Slices Aged (Sharp/Picante) Provolone Cheese
2-3 T. Olive Oil
Salt
-Cut tops off of peppers then make a slit down one side, spoon out as many seeds as you can reach, but leave peppers as whole as possible.
-Heat oil in a frying pan, add peppers, fry until lightly brown on both sides, about 10 minutes, add salt to taste.
-Add garlic to peppers, fry to infuse flavor, remove pan from heat.
-Slice bread length ways, layer on peppers and garlic, drizzle with olive oil, top with cheese and bake in 400 degree oven 7-10 minutes.
